Wrap ‘Em Up Chicken Fajitas

Mexican food is back with these spiced up chicken fajitas wrapped in crisp lettuce leaves.
Ingredients: 
  • 3.5 oz. (100 g) boneless chicken breast, cut into thin strips
  • Salt and pepper to taste
  • 1/2 tsp. chili powder
  • 1/8 tsp. ground cumin
  • 1/4 cup low-sodium chicken broth (no sugar!)
  • Juice of 1/2 lemon
  • Romaine lettuce leaves (equal to 2 cups)
  • Frank’s Hot Sauce, for seasoning
Directions: 

1. Heat a nonstick skillet over medium-high heat. Season chicken pieces with salt and pepper and add to skillet. Sprinkle with chili powder and cumin. Stir constantly to cook through, 5 minutes.

2. Combine the broth and lemon juice and pour into the skillet stirring to coat. Remove from the heat when liquid is evaporated.

3. Serve immediately, wrapped in the lettuce leaves, with a dash of hot sauce, if desired.
