Apple Fig Stuffed Chicken Tenders

Poultry and apples always make a great pair and in this terrific rendition they get another dimension of flavor from the delightful addition of Capella Fig flavor drops.
Ingredients: 

For the Stuffing:

  • 1 medium apple, cored, and cut into small dice
  • 1 cup celery, cut into small dice
  • Salt and pepper to taste
  • 1/2 cup water
  • 1 tsp. lemon juice
  • 6 drops Capella Fig
  • 10 drops Clear Stevia
  • 2 grissini/breadsticks, crushed into crumbs

 

  • 7 oz. (200 g) chicken tenders, pounded thin
  • 1/2 cup low sodium chicken broth (no sugar!)
  • Dash ground cinnamon

 

Directions: 

1. In a nonstick skillet combine the apples, celery, salt and pepper.

2. In a small bowl combine the water, lemon juice, Capella and Stevia and pour over the apple mixture. Cook, stirring often, until the apples and celery begin to soften, 6 to 8 minutes. Remove from the heat, stir in the breadstick crumbs and set aside to cool.

3. Preheat the oven to 350 degrees F.  Place the chicken tenders on a sheet of waxed paper in a single layer, and sprinkle with salt and pepper.

4. Distribute the stuffing mixture among the tenders, placing in the center and pressing with your fingers to form a mound. Roll up each tender and secure with toothpicks.

5. Place in a nonstick baking pan and pour the chicken broth over. Sprinkle with the cinnamon, cover with foil and bake until the chicken is cooked through, 20 to 25 minutes.

6. Allow to rest for 5 minutes before removing the toothpicks and serving.
