Easy Spinach and Artichoke Dip

Serve up this terrific version of a popular dip with raw veggies for dipping.
  • 1 (14 oz.) can artichoke hearts, drained
  • 1 (10 oz.) package frozen chopped spinach, thawed and drained
  • 1 cup plain yogurt
  • 1 cup shredded mozzarella cheese
  • 1 large garlic clove, chopped
  • 2 scallions, trimmed and chopped

1. Preheat oven to 350 degrees F. Lightly coat a 1 quart baking dish with oil or cooking spray.

2. Place all the ingredients in a food processor and pulse until well combined but still a bit chunky.

3. Transfer to the prepared baking dish and bake for 20 to 25 minutes or until heated through and bubbly around the edges. Serve immediately.
