Carrot Coins in Praline Glaze

A great side dish at holiday time, naturally sweet carrots get a boost of sugary pecan flavor thanks to Capella.

1. Preheat the oven to 375 F.  Place carrots in a medium roasting pan, add oil, salt and pepper, and toss to coat.

2. Roast in the oven until nearly fork tender, about 12 minutes. Combine orange juice and Capella and Stevia and pour over all.

3. Continue roasting until carrots are cooked through slightly glazed and browned, about 8 to 10 minutes more. Serve immediately.


M1 Caution Modification: Add 2 Tablespoons chopped pecans during last 5 minutes.

M2/Life Modification: Add 2 Tablespoons chopped pecan pralines and top with some miniature marshmallows just before serving.
