Cucumber Cilantro Salsa

Try this alongside grilled fish or chicken for a lively accompaniment that’s full of great flavor and tang.
  • 2 cups cucumber, peeled, seeded, and diced
  • Salt and pepper to taste
  • 2 TBSP fresh cilantro, chopped
  • 2 TBSP red wine vinegar
  • 8 drops Capella Lemon Lime
  • 6 drops Clear Stevia
  • Dash Frank’s Hot Sauce

1. In a medium bowl, combine the cucumber, salt, pepper, and cilantro and toss well to combine.

2. In a small bowl, stir together the remaining ingredients and pour over the cucumber mixture. Toss again to coat well and refrigerate for at least one hour before serving.
