Cucumber Salad with Fig Vinaigrette

Serve up this refreshingly crisp and sweet side salad with grilled chicken or steak for the perfect lunch or dinner.
  • 2 cups thinly sliced peeled cucumbers
  • Salt and pepper to taste
  • 1/3 cup organic red wine vinegar
  • 10 drops Capella Fig
  • 15 drops Clear Stevia
  • 2 tsp. finely chopped fresh parsley leaves

1.  Place the cucumbers in a large mixing bowl.

2. In a small mixing bowl combine the remaining ingredients and pour over the cucumbers. Toss well to coat and refrigerate for at least 1 hour, occasionally stirring gently. Serve well chilled.
