Tropical Chicken Salad

The wonderful flavor of piña colada brings this delicious salad to amazing tropical heights with refreshing and irresistible results.
Ingredients: 
  • 3.5 oz. (100 grams) chicken breast, cooked and diced
  • 1/2 pink or yellow grapefruit, peeled and cut into pieces, juices reserved
  • 1 TBSP milk
  • 2 TBSP water
  • 5 drops Capella Piña Colada
  • 4 drops Clear Stevia
  • Salt to taste
  • Dash paprika
  • 2 cups romaine lettuce, thinly sliced
  • 1/4 cup mint, roughly chopped
Directions: 

1. Place the chicken and grapefruit in a large bowl.

2. In a small bowl, whisk together the grapefruit juice, milk, water, Capella, and Stevia. Pour over the chicken mixture and toss to coat.

3. Sprinkle with salt and paprika, toss again and set aside for 20 minutes.

4. Add the lettuce and mint to the chicken mixture and toss well to combine. Serve immediately.
