Holiday Ham Steak with Redeye Gravy

Capella Cherry Cola adds just the right amount of sweetness to this classic dish that’s quick and easy to make.
  • 1 tsp. olive oil
  • 1 single serve (about 4 oz.) pre-cooked ham steak
  • Fresh ground pepper
  • 2 TBSP diced canned cherries, no syrup/sugar
  • 1/2 cup cold coffee
  • 4 or 5 drops Capella Cherry Cola
  • 6 drops Clear Stevia, or more to taste
  • 1 tsp. finely chopped parsley

1.  Heat the oil in a nonstick skillet over medium-high heat. Add the ham steak, season with pepper, and brown lightly on each side for about 2 minutes.

2.  Stir in the cherries and cook, stirring, a further minute.

3.  In a small bowl combine the coffee with the Capella and Stevia drops. Pour into the skillet, stir, reduce the heat to low and cover. Continue to cook until the ham is heated through and the sauce is slightly thickened, about 2 minutes more.

4. Transfer to a dinner plate, spoon sauce over, top with the parsley and serve immediately.


M1 Caution Modification: Stir in 1 Tablespoon of dark seedless raisins with the cherries.
