Cool Minty Cucumber Soup

No cooking required for this refreshing cold soup perfect for a hot day. Aromatic and tangy, with a hint of lemon, it’s the perfect accompaniment for spicy grilled chicken. Look for English cucumbers, which are mostly seedless with soft rinds.
  • 3 cups chicken or vegetable broth (no sugar!)
  • 1 cup water
  • 10 drops Capella Cool Mint
  • 5 drops Stevia Lemon Drop
  • 5 drops Clear Stevia
  • 1 tsp. ground cumin
  • Juice of 1/2 lemon
  • 4 cups English cucumbers, roughly chopped
  • 1/4 cup fresh mint, roughly chopped
  • Salt and pepper to taste
  • 2 TBSP diced cucumber for garnish

1. In a large bowl, combine the broth, water, Capella and Stevia drops, cumin, and lemon juice.

2. Stir in the cucumbers and mint and set aside for 15 minutes.

3. Working in batches, puree the cucumber mixture in a blender until smooth and transfer to a clean bowl. Season to taste with salt and pepper.

4. Serve chilled, garnished with the diced cucumber.
