Game Day Chili

Make this dish the night before serving – it will taste even better when reheated!
Ingredients: 
  • 1 TBSP olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, seeded and diced
  • 8 oz. lean ground beef
  • Salt and pepper to taste
  • 2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. paprika
  • Dash cayenne pepper
  • 1 can (15 oz.) diced tomatoes, with juices
  • 1 TBSP tomato paste
  • 6 drops Clear Stevia
Directions: 

1. Heat oil in a large heavy-bottomed pot over medium-high heat. Add onion, bell pepper, and beef, season with salt and pepper, and cook, stirring often, until meat is lightly browned, about 6 minutes.

2. Add chili powder, cumin, paprika, and cayenne pepper and cook, stirring constantly for 1 minute. Add tomatoes, tomato paste, and Stevia, and bring to a boil. Reduce heat to medium-low and cook at a simmer for 10 to 15 minutes until thick and rich.

3. Serve immediately or cool slightly and transfer to an airtight container. Keep refrigerated or well chilled until ready to reheat.

 

M1 Caution Modification: Add a tablespoon of cheese or sour cream at the end.
