For the Topping:


1. Combine the cottage cheese with the next two ingredients in a blender and pulse until smooth. Transfer to a parfait glass or dessert dish and refrigerate.

2. Toss together the ingredients for the topping and set aside for 15 minutes.

3. When ready to serve, sprinkle the topping over the cheese mixture and stir in gently.
