Super Shrimp Gumbo

Perfect for a crowd and full of spicy tomato flavor. You can substitute or add chicken, as preferred.
Ingredients: 
  • 1 lb. medium shrimp, shelled and deveined
  • 1 tsp. Creole seasoning blend
  • 1 TBSP olive oil
  • 1 small onion, diced
  • 1 small green bell pepper, cored, seeded and diced
  • 1 medium celery stalk, trimmed and diced
  • Salt and pepper to taste
  • 1 garlic clove, minced
  • 1 can (15 oz.) crushed tomatoes
  • 1/2 cup water
  • 6 drops Clear Stevia
  • 1 TBSP tomato paste
  • 1/2 tsp. dried oregano
  • Dash file powder
Directions: 

1. Place shrimp in a large bowl and sprinkle with the creole seasoning. Set aside.

2. Heat the oil in a heavy-bottomed pot over medium-high heat. Add the onion, green pepper, and celery, season with salt and pepper, and cook over medium heat until the vegetables are softened, stirring often, about 4 minutes. Add the garlic and cook, stirring, a further minute.

3. Stir in the tomatoes, the water, Stevia, tomato paste, and oregano and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes, stirring occasionally.

4. Add the shrimp, stir well, and simmer until just cooked, 3 to 4 minutes. Remove the shrimp with a slotted spoon and transfer to a warm serving bowl.

5. Continue to simmer the sauce until well thickened, 5 to 8 minutes more. Taste for seasoning, pour over the cooked seafood and serve immediately, with a sprinkling of file powder.

 

M1 Caution Modification: Add a dollop of sour cream to cool the palate.
