Bacon and Egg Spinach Salad

As good as the real thing, you’ll love this as a main course salad for lunch or dinner.
Ingredients: 

Salad:

  • 3 cups fresh baby spinach
  • 1 Melba toast, crumbled

Dressing:

  • 2 TBSP apple cider vinegar
  • 8 to 10 drops Clear Stevia
  • 3 to 5 drops Capella Bacon flavor
  • 1/4 tsp. garlic granules
  • 1/4 tsp. onion flakes
  • Salt and pepper to taste
  • 1 whole hard-boiled egg, plus three whites, peeled and roughly chopped
Directions: 

1. Place the spinach in a salad bowl. In a small bowl, whisk together the vinegar, Clear Stevia, Capella, garlic, onion flakes, and salt and pepper.

2. Gently stir in the chopped egg and add to the spinach, tossing well to coat.

3. Taste for additional seasoning and serve immediately with the crumbled Melba on top.
