Chocolate Minty Macaroons

Moist and delicious, these treats are oh so easy to eat and make a great addition to a holiday cookie plate.
Ingredients: 
Directions: 

1. Preheat the oven to 325 degrees F.  Line a baking sheet with parchment paper.

2. In a medium bowl, toss together the coconut, protein powder, cocoa, and salt, distributing well. In a small bowl combine the drops with the egg whites. Stir the egg white mixture into the coconut mixture and drop by teaspoon-full onto the prepared pan to form 24 cookies (close together is fine.)

3. Bake until the cookies are lightly browned on the edges, about 20 minutes. Transfer the cookies to a wire rack to cool.

 

M1 Caution Modification: Substitute almond flour for the protein powder.

M2/Life Modification: Substitute plain flour for the protein powder and use sweetened shredded coconut for half the amount of coconut, adjusting Stevia as needed.
