Tart Apple Slaw

Crisp and refreshing, this slaw is perfect as a side to ham or as part of a satisfying lunch.
  • 4 cups thinly sliced white cabbage (about 1 lb.)
  • 1 large carrot, peeled and coarsely grated
  • 2 Granny Smith apples, cored and diced
  • 3 TBSP olive oil
  • 3 TBSP white wine vinegar
  • Salt and pepper to taste
  • 6 to 8 drops Capella Green Apple
  • 12 drops Clear Stevia, or more to taste

1. In a medium bowl toss together cabbage, carrot, and apple.

2. In a small bowl whisk together remaining ingredients. Pour over cabbage mixture and toss well to coat.  Set aside at room temperature for 15 minutes. Taste for seasoning before serving.


M1 Caution Modification: Stir in 3/4 cup diced or shredded cheddar cheese.

M2/Life Modification: Stir in 1/2 cup halved seedless grapes.
